Sweet & Sour Chicken, Pork, or Shrimp |

Ingredients |
| |
1 pound skinless, boneless
chicken, boneless pork, or shelled frozen shrimp
1package frozen Chinese vegetables
1package sweet & sour mix (Durkees)
2 or 3 minced garlic cloves or 1tablespoon of garlic power
6 oz. cooking oil
2 pouches of "boil in bag instant rice"
1small can crushed pineapple
2 tablespoons cornstarch |

Directions |

At
home before camp:
Cut the chicken or pork into 1 inch pieces (bite-size). Place the
pieces in a plastic bag with some cornstarch and shake until all
pieces are evenly covered. Place the coated meat on a flat tray
and place in the freezer until frozen solid. Remove from the freezer
and place in a Ziploc bag and put back into freezer until needed.
This procedure will allow easier preparation in the field as you
will have easily separated chunks of meat instead of a solid mass.
In camp:
- Add 1 cup of water to sweet & sour mix. Bring to a boil and boil
for 1 minute. Stir in the crushed pineapple and set aside.
- Saute the chicken, pork or shrimp in oil and garlic. When done,
add to the pot with the sweet & sour sauce.
- Saute the Chinese vegetables in oil and garlic until hot. Do not
overcook. Vegetables should be on the crunchy side, not soggy. Add
to the pot with the chicken, pork, or shrimp and the sweet and sour
sauce. - Boil the rice packets for 10 minutes.
- Time it so the rice is finished when the vegetables are cooked.
Add the rice to the pot with all the other ingredients and mix well. |
