  Pineapple Nut Cake - Dutch Oven
  Ingredients
 

1 can (No. 2) crushed pineapple (2-1/2 cups): pour off about 2/3 of juice
2 cups flour
1 cup sugar
2 eggs, beaten
1-1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. mace
1tsp. vanilla
1cup pecans, chopped
1/3 cup margarine,melted shortening, or pan spray

  Directions
  1. Mix all ingredients lightly until moistened.
2. Pour into greased cake pan and place into pre-heated Dutch oven, and bake until done and browned on top.
3. Let sit 15 or 20 minutes before serving.
4. Can be served plain, with a thin coat of powdered sugar, or can be served with frosting.

Oven: Pre-heat Dutch oven 10-15 minutes. Bake 60 minutes (until done). 8 briquettes beneath oven and 16 briquettes on top (350 degrees, approx.). (During cold weather, you may need a few more.)

Cooking Tip: Check to see if cake is done by sticking it with a toothpick (or small twig) - it should come out clean - and by checking its firmness. The stick test can sometimes be deceiving with this kind of cake because, early on, it has a great deal of pineapple juice. To really be sure, make a small knife slit and check inside.
